spread out and make use of a larger cool room,
cellar and kitchen, yet maintain the same intimacy
of the original site.
Between Paul and Luke the wine list and cellar
is maintained with international, national and more
than just a few Southern Highlands wines gracing
Luke said Paul tasted and selected all the wines
for the list and he did a great job of showcasing
"We have such a unique climate and are our
own little green Tuscan heart of NSW. Using local
produce and wines is essential."
The menu changes daily according to the
availability of fresh produce, evidence of which is
seen on the menu showing the day's date.
"We have seven to eight signature dishes that I
have to keep on, or some of my customers get
emotional! While the rest are constantly evolving
and changing to keep everyone happy," he said.
Small quantities of each quality dish are made
ensuring there is no wastage and everything is
sold at the end of the day.
Luke moves onto the next day adding some new
items and tweaking some old where necessary.
Gemma handles everything the boys do and
more. Administration, accounting, cleaning,
working the floor and cooking - all while
managing two young children, and it's all done for
the love of the job.
"We are all passionate about food at Onesta
Cucina - and so are our customers," she said. Luke
said that people wanted a dining experience with
quality food in quality surrounding.
"It must feel like they are eating in their own
homes when they come to us. Our clientele love their
food and dining out - not just eating a meal," he said.
This perennially popular restaurant keeps its
customers satisfied and will continue to do so as
Onesta Cucina, bringing honest and delicious
food to the table.
